First it gave me an error about a customized xorg.con so I deleted it.
Next error was a customized X. That was a sym link so I delete it.
Now it quits before the section of monitor setup without any errors.
Any ideas? (besides the install-nvidia-whatever scripts)

jackiebrown I thought you knew better! Of course never just delete files! Instead use mv.

mv xorg.conf orig_xorg.conf
Then you can always put it back if need be.
Sounds strange that you say dpkg errored becasue of a customized xorg.conf. Normally it would simply let you decide to let you keep your current xorg.conf or not. Are you sure it was an actual error?
dpkg knows when the xorg.conf file has been edited by some means other than dpkg-reconfigure.
If nothing else, you can always boot the live cd and copy an xorg.conf from there.
Of course never just delete files! Instead use mv.
